Welcome. This course is designed to help you understand how to cook with plants in a clear, practical way.
Each module will be released weekly, so everyone moves through the course together. I recommend cooking every recipe, they’re part of the learning. Each one is there to demonstrate a technique, a flavour principle, or a way of thinking that will carry into everything else you cook.
Watch the videos first, then use the PDFs as reference notes while you cook. The PDFs for each module are available to view on the page and can also be downloaded using the Download PDF buttons, so you can keep them to hand in the kitchen.
Pause, rewind, and revisit whenever you need. Taste as you go, pay attention to what you see, smell and feel, and let that guide you.
