Tomato and Tajin Tofu Scramble

Tajin is a classic Mexican spice blend that's the perfect blend of limey, spicy and salty. I used it to flavour this delicious tofu scramble but you can use lime, chilli and salt and maybe a chilli sauce if you like to up the flavour.

Ingredients

  • 2–3 tsp Tajin classic seasoning
  • 2–3 tbsp Tajin Chamoy sauce
  • 2–4 garlic cloves
  • 1 x 400 g box medium-firm tofu (the type packaged in a tray with some water)
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tbsp soy sauce
  • 1 tin (400 g) chopped tomatoes (or plum/cherry tomatoes)
  • 300 g cherry tomatoes
To serve
  • 6–8 corn tacos
  • 1 avocado
  • Coriander leaves
  • Crispy fried garlic
  • Sesame seeds

Instructions

  1. Remove the tofu from the packet, gently squeeze out some of the water, and pat it dry.
  2. Cut the cherry tomatoes in half and mince the garlic. Heat a frying pan on medium heat with a good drizzle of olive oil. Add the tomatoes and garlic with a big pinch of salt, and cook for 3–5 minutes until softened and releasing their juices.
  3. Add the ground coriander, cumin, smoked paprika, and soy sauce. Stir, then add the chopped tomatoes and crumble in the tofu, keeping the pieces fairly large as they will break down as they cook. Simmer for 5–8 minutes, then stir in the Tajin seasoning.
  4. Drizzle over the Chamoy sauce to finish, and serve with corn tacos, avocado, coriander, crispy fried garlic, and sesame seeds.
