Lazy Cheats Lasagne

The beluga lentils are a staple in my cupboard and such a welcome change to the tins of beans that I usually reach for. This is such an easy weeknight recipe for when you are craving a lasagne in half the time.
Ingredients
Tomato lentil sauce:
- 1 tin of Beluga Lentils
- 250g Lasagne Sheets
- 1 tin Whole Cherry Tomatoes
- 50g Sun Dried Soft Tomatoes
- ½ red onion
- 3-4 garlic cloves
- 1 tbsp smoked paprika
- 1 tbsp balsamic vinegar
- 1 tsp soy sauce
- 1 stock cube
- 1 tbsp nutritional yeast
- 1 ½ tbsp tomato paste
- 5g fresh parsley or basil
Cashew Cream
- 3 tbsp Biona Cashew Nut Butter
- 5-7 tbsp plant based milk
- 1 tbsp nutritional yeast
- ¼ tsp onion powder
- 1/4 tsp garlic powder
- ¼ tsp salt
- ½ lemon
Instructions
- Bring a pot of salted water to a boil and cook the lasagne sheets for 8 minutes, stirring occasionally to help prevent them from sticking. Drain, add them to a bowl and drizzle over a little olive oil and a splash of pasta water. Toss to stop them from sticking and drying out.
- Finely chop the onion and mince the garlic. Roughly chop the sun dried tomatoes.
- Add a couple of tbsp of sun dried tomato oil into a pan and sauté the onion for 3-4 mins on medium heat until softened but not crispy.
- Add the tomato paste, garlic and paprika and cook for 1-2 minutes until browned and fragrant. Then add the tin of cherry tomatoes, fill the tin with water halfway, and add that to the pan too. Crumble in the stock cube. Add the nutritional yeast, balsamic vinegar and sun dried tomatoes and let it bubble away for 10 mins on medium heat, until thickened.
- Then stir through the lentils and stir to warm through for 2-3 mins more. Season well with plenty of salt and pepper.
- While the sauce is simmering away, make the creamy cashew sauce. Add all of the ingredients to a bowl and stir to combine. Taste and adjust seasonings. It should be creamy and spoonable, so add more milk if you need to and stir until smooth.
- To serve, you can either add the lasagne straight into the pot with the sauce and stir through or layer the lasagne sheets and ragu into pasta bowls. Top with the cashew cream, plenty of black pepper and your fresh herbs.
